Keith Young’s Guacamole

This guacamole was one of Keith Young’s
favorite foods to make in the firehouse as it was
easy to whip up and beloved by all of his NYFD
colleagues – and his family at home.

INGREDIENTS

3 ripe avocados, peeled, pitted and diced
1/2 red onion, finely diced
1 to 2 garlic cloves, minced
3 Tbs. chopped fresh cilantro
1 tsp. chopped jalapeño chile, or more to taste
Juice of 1 lime
Kosher salt and freshly ground pepper
1 tomato, diced

DIRECTIONS

In a bowl, combine the avocados, onion, garlic,
cilantro, jalapeño, lime juice and salt and pepper
to taste. Using a fork, thoroughly stir and mash
the ingredients together until the mixture forms a
chunky paste. Add the tomato and stir gently to
combine. Taste and adjust the seasoning with
more salt and pepper and additional jalapeño, if
desired. Serves 5 to 6.
