Sparkling Blueberry Mint Lemonade

Fresh blueberries and mint lend a refreshing twist to classic lemonade, while sparkling water adds a bit of bubbly. Just right for warm summer days, this festive beverage is something that style icon Aerin Lauder might serve at leisurely summer gatherings at her family’s Hamptons home.

Ingredients:

  • 1 cup (8 fl. oz./250 ml) water
  • 1 cup (8 oz./250 g) sugar
  • 1 cup (1 oz./30 g) fresh mint leaves, lightly crushed
  • 2 cups (8 oz./250 g) blueberries
  • 1 cup (8 fl. oz./250 ml) fresh lemon juice (from about 8 lemons)
  • 8 cups (64 fl. oz./2 l) sparkling water
  • Ice (optional)
  • Fresh mint leaves for garnish
  • Lemon slices for garnish

Directions:

In a small saucepan over high heat, combine the water, sugar and mint leaves. Bring to a boil, then reduce the heat to medium-low and simmer, stirring occasionally, until the sugar is dissolved, about 2 minutes. Remove from the heat and let cool to room temperature. Strain the syrup through a fine-mesh sieve into a small bowl; discard the mint leaves.

In a drink dispenser or large pitcher, combine the blueberries, lemon juice and mint syrup. Using a long wooden spoon, muddle the blueberries until lightly crushed. Add the sparkling water and stir to combine. Add ice or refrigerate for at least 2 hours, or up to 4 hours, before serving. Just before serving, garnish with mint leaves and lemon slices. Serves 8.
