A crown roast of pork is always an impressive centerpiece for the Christmas Day feast. Ours is cooked with Golden Delicious apples alongside, then finished with a pan sauce prepared with Calvados, a French apple brandy. Savory side dishes include apple-pecan dressing, root vegetable gratin enriched with Gruyère cheese and broccolini sautéed with garlic. Tarte tatin, the French apple upside-down tart with a luscious caramelized-apple filling, makes a fitting ending to this celebratory meal.
