Beef Sliders with Caramelized Onions and Blue Cheese

No game-day spread is complete without some savory sliders. These are tucked inside lettuce cups (in lieu of buns), then topped with caramelized onions and blue cheese. They’re a snap to make with the All-Clad Autosense Grill, which relies on sensor technology to detect the thickness of your food and adapt the temperature and cooking time accordingly, so your burgers will turn out perfectly every time. (You can also prepare the burgers on a grill pan instead, if you prefer.)

Ingredients

  • 1 Tbs. extra-virgin olive oil, plus more for brushing
  • 1 yellow onion, thinly sliced
  • Kosher salt and freshly ground pepper
  • 1 Tbs. balsamic vinegar
  • 1 lb. (500 g) ground beef
  • 8 tomato slices
  • 8 butter lettuce leaves
  • 3 oz. (90 g) blue cheese, crumbled

Directions

In a large fry pan over medium-low heat, warm the olive oil. Add the onion and a pinch each of salt and pepper and cook, stirring occasionally, until the onion is tender and caramelized, 15 to 20 minutes. Stir in the vinegar and season to taste with salt and pepper. Remove from the heat and keep warm.

Divide the ground beef into eight 2-oz. (60-g) balls and shape into patties. Season on both sides with salt and pepper.

Preheat an All-Clad Autosense Grill according to the manufacturer’s instructions and brush with olive oil. Add the patties to the grill and close the lid. Cook until the indicator light stays solid next to your desired level of doneness and you hear a beep. (If you are using a grill pan instead, grill the patties, turning once, until charred on both sides and they reach your desired doneness, about 3 minutes per side for medium-rare.)

Place a tomato slice on top of each lettuce leaf. Top each with a patty, followed by the caramelized onions and blue cheese. Serve immediately. Serves 4.
