Belgian Waffles with Strawberries and Coffee-Nutella® Crème Fraîche

Everyone will rise and shine when you serve up these waffles topped with fresh strawberries, which are macerated with sugar and lime until they’re extra sweet and juicy. It’s the creation of award-winning chef and French Laundry alum Tim Hollingsworth, who gives the waffles a decidedly grown-up twist by adding a dollop of crème fraîche spiked with Nutella® and coffee.

Ingredients

  • 2 pints (1 lb./500 g) strawberries, hulled and halved if small or quartered if large
  • 3 Tbs. sugar
  • Grated zest of 2 limes
  • 2 tsp. fresh lime juice
  • 5 Tbs. unsalted butter, melted
  • 2 cups warm water (110° to 120°F/43° to 49°C)
  • 2 1/2 cups (10 oz./285 g) Bellegem waffle mix
  • 1 cup (9 oz./280 g) Nutella®
  • 1 cup (8 oz./250 g) crème fraîche
  • 3/4 tsp. finely ground coffee
  • Confectioners’ sugar for dusting
  • Fresh mint leaves for garnish

Directions

In a large bowl, combine the strawberries, sugar, lime zest and lime juice and toss gently. Let stand, tossing occasionally, until juicy, about 30 minutes.

Meanwhile, prepare the waffles. In a large bowl, whisk together the melted butter and warm water until well blended. Add the waffle mix and whisk until blended. Do not overmix; the batter will appear lumpy. Let the batter stand at room temperature for about 15 minutes.

Meanwhile, spray a waffle maker with nonstick cooking spray, wiping off any excess. Preheat the waffle maker to medium-high heat. Preheat an oven to 200°F (95°C). Set a wire rack on a baking sheet.

Gently stir the batter, then pour into the center of the waffle maker until almost full. Close the lid and cook according to the manufacturer’s instructions until crisp and golden brown. Transfer the waffles to the rack-lined baking sheet and keep warm in the oven while you cook the remaining batter.

While the waffles are cooking, in a large bowl, whisk together the Nutella®, crème fraîche and coffee until soft peaks form.

Divide the waffles among 4 plates. Top with the strawberries and a dollop of the coffee-Nutella® crème fraîche. Dust lightly with confectioners’ sugar, garnish with mint leaves and serve immediately. Serves 4.
