Boozy Guinness Ice Cream Floats
Read Reviews >
Who says ice cream floats are only for kids? A scoop of coffee ice cream and a drizzle of chocolate turn rich, dark Irish stout beer into a celebratory dessert drink for adults.
Ingredients
- 1 pint (16 fl. oz./500 ml) coffee ice cream
- 4 Tbs. (2 fl. oz./60 ml) chocolate syrup
- 2 cans (each 16 fl. oz./500 ml) Irish stout beer, such as Guinness, or chocolate stout beer
Directions
Freeze four 1-pint (16-fl.-oz./500-ml) glasses for 30 minutes.
Divide scoops of the ice cream between the glasses. Drizzle each serving with 1 Tbs. of the chocolate syrup, then top with the beer. Serve immediately. Serves 4.

Use different ice cream in these.....
I am a huge fan of a Guinness Float! I think the key here is to use Irish Cream ice cream instead of coffee though. The dark, bitter Guinness just goes so magically with sweet Irish Cream and chocolate sauce. If you're not a stout beer fan this might not be for you. Perfect dessert, especially around St. Patrick's Day.

This is gross. Don't make it. It's a waste of all ingredients.

Disappointed
I used Guinness stout beer and this recipe did not taste very good. I kept adding more chocolate syrup but it did not improve the taste. The coffee ice cream and the beer had a complementary taste but there was something missing. It was very heavy on the palate and needed a top note of something extraordinary, but I couldn't figure out what it needed. Will not make again.
