David Chang’s Easy Kimchi Jjigae

As the temperature starts to dip, there's nothing quite as comforting as kimchi stew (known in Korean as kimchi jjigae). This simple, hearty meal from chef David Chang comes together quickly with the help of a microwave and Anyday cookware. All of Anyday’s recipes are tested (and retested!) in many different microwaves and home kitchens to make sure they work—and work well.

Add the bacon, onion, and garlic to the Anyday Medium Deep Dish and stir to combine. Cover with the lid (knob lifted).

In a 1,000-watt microwave, cook for 2 minutes, or until the bacon starts to render and the onion begins to soften.

Stir in the kimchi, soy sauce or tamari, and gochujang. Add the sliced tofu, nestling it among the other ingredients.

Microwave for an additional 5 minutes, or until the kimchi is heated through, and the stew is bubbly.

Garnish with scallions and serve with white rice if desired. Serves 2 to 4.

Recipe notes and variations:

• Add sliced mushrooms with the bacon.

• Add chili flakes or more gochujang for an extra kick.

• Add frozen spinach for extra fiber.

• This dish will taste even better the next day, once the flavors had time to infuse each other. Reheat the next day and enjoy!

• Microwave ovens vary, even with the same wattages. Adjust cooking times as needed.
