Grilled Pineapple with Smoky Citrus Habanero Rub

Grilling fruit softens the flesh and caramelizes some of the natural sugars, resulting in a tender texture and complex aroma. A sprinkling of a smoky-spicy spice rub adds even more flavor to this easy grilled pineapple, which we love to toss with avocado and fresh cilantro leaves for a simple, colorful salad.

Ingredients

  • 1 small pineapple
  • 1 Tbs. Smoky Citrus Habanero Rub
  • Vegetable oil for brushing
  • Lime wedges for serving

Directions

Prepare a medium-hot fire in a grill.

Using a sharp knife, trim and peel the pineapple. Cut the pineapple into quarters lengthwise and cut away the core from each piece. Cut each quarter crosswise into pieces about 1/4 inch (6 mm) thick.

In a bowl, toss the pineapple slices with the spice rub to coat.

Lightly brush an outdoor fry pan with vegetable oil. Place the pan on the grill, cover the grill and preheat for the pan for about 5 minutes. Working in batches if necessary, arrange the pineapple slices in the pan in a single layer. Grill, turning once, until the pineapple is lightly charred all over, 3 to 4 minutes per side. Serve with lime wedges alongside. Serves 4.
