Before chopping the rhubarb to make the cordial, be sure to shave a few thin ribbons from the stalks to garnish your drinks.

Ingredients

For the rhubarb cordial:

  • 3 stalks fresh rhubarb, chopped
  • 1 cup (8 oz./250 g) superfine sugar
  • 1 cup (8 fl. oz./250 ml) hot water
  • 2 oz. (60 ml) Seedlip Grove 42
  • 3 oz. (90 ml) Fever-Tree Aromatic Tonic Water
  • 1 long, thin ribbon of rhubarb for garnish

Directions

To make the rhubarb cordial, in a bowl, combine the chopped rhubarb, sugar and hot water and stir until the sugar is dissolved. Let stand at room temperature for 2 hours. Pour through a fine-mesh sieve into a clean jar. Use immediately or cover and refrigerate until ready to use.

To assemble a drink, fill a wine glass with ice cubes. Add the Seedlip Grove 42 and 1/2 oz. (15 ml) of the rhubarb cordial to the glass. Add the tonic water and stir to combine. Garnish with the rhubarb ribbon and serve. Makes 1 drink.
