Sparkling Yuzu Sweet Tea

If you haven’t tried yuzu juice before, you’re in for a treat. This fragrant citrus fruit has a tart, complex flavor that is somewhat similar to lemon juice but with hints of mandarin and grapefruit as well. Fresh yuzus are very difficult to find in the United States, but their bottled juice can be found in many Asian (especially Japanese) markets and some better-stocked grocery stores. For the tea, we recommend using strong, freshly brewed green tea, made using two tea bags per cup of water and steeped for 30 minutes to an hour.

Place a large coupe or cocktail glass in the freezer to chill at least 30 minutes before serving.

In a mixing glass, combine the tea, lemon juice, yuzu juice and ginger syrup; stir to combine.

Add the mixture to the bottle attachment of a Breville InFizz Fusion. Press the lever down four to five times at 2-second intervals, or until you hear a popping sound. Pour into the chilled glass, garnish with the lemon wheel and jasmine sprig, if using, and serve immediately.
