Turmeric Coconut Water Margarita

If you’re a margarita fan but prefer yours without the tequila, this mocktail is for you. To create this summertime refresher, we blend coconut water with a simple syrup that’s infused with ground turmeric and black pepper for a hint of spice. Fresh lemon juice brings brightness to the drink, and bubbly water made in the SodaStream adds the fizz. Pour into chilled glasses rimmed with salt and raise a toast to summer.

To make the turmeric simple syrup, in a small saucepan over medium-high heat, combine the sugar and water. Bring to a simmer and whisk until the sugar has dissolved. Remove from the heat and whisk in the turmeric and a few grindings of pepper. Transfer the simple syrup to an airtight bottle or jar and let cool completely. The syrup can be covered and refrigerated for up to 3 weeks.

Place 1/4 cup (2 oz./60 g) salt in a small bowl and spread in an even layer. Brush the rims of 2 coupe glasses with simple syrup. Dip the rim of each glass into the salt and shake off any excess. Place the glasses in the freezer to chill for about 1 hour before serving.

Meanwhile, in a large measuring cup or pitcher, whisk together the coconut water, lemon juice and simple syrup. Taste and adjust as desired, adding more lemon juice for acidity or more simple syrup for sweetness.

Pour the water into a SodaStream bottle. Insert the bottle into the SodaStream machine and set to maximum fizz according to the manufacturer’s instructions. Once the water has carbonated, remove the bottle from the machine, pour the carbonated water into the pitcher with the coconut water mixture and stir gently to combine.

To serve, add a large ice cube to each chilled glass. Pour the coconut water mixture over the ice, filling the glasses. Garnish each with a lemon slice and serve immediately. Serves 2.
