• This fruit-forward glaze can be used as a finishing sauce, but we like to add it to meat – such as ham or poultry – while it's roasting to infuse it with delicious bourbon flavors.

Preparation Instructions

• Preheat oven to 325°F. Place 10–12 lb. ham on roasting rack flat side down in roasting pan. Coat ham with approx. 1/3 of glaze and cover loosely with aluminum foil. Bake for 2–2 1/2 hours, until instant-read thermometer inserted into center of ham measures 130°F–140°F. Remove ham from oven and increase temperature to 425°F. Remove foil and brush ham with another 1/3 of glaze. Return ham to oven for approx. 5 minutes. Remove ham from oven and coat with remaining 1/3 of glaze. Return to oven and cook for 5–10 minutes. Monitor cooking closely to avoid burning glaze. It should turn a rich, deep ruby color. Remove ham from oven, tent loosely with foil and let rest for 20 minutes. Transfer to large cutting board to slice. Store leftovers in refrigerator.
