Preparation Instructions
- 1 yeast packet (included)
- 1 package pizza crust mix (included)
- 1 cup (250ml) plus 3 Tbs. warm water (110°F to 115°F / 40°C to 46°C)
- 2 Tbs. olive oil, plus more for brushing
- 3 Tbs. canola oil
- 1 cup (250ml) Golden Boy pizza sauce
- 2 cups (250g) shredded mozzarella cheese as desired
- 1 packet seasoning mix (included)
In the bowl of a stand mixer, whisk together the yeast, 1/4 cup of the dough mix and 1 cup of the warm water. Let stand 10 minutes. Fit the mixer with the dough hook. Add the remaining dough mix, the remaining 3 Tbs warm water and 1 Tbs olive oil and beat on low speed for 1 minute. Increase the speed to medium-low and mix for 5 minutes.
Remove the dough from the mixer and shape into a ball. Lightly brush the dough and a large bowl with olive oil and put the dough into the bowl. Cover and place in a warm, draft-free location for 45 minutes.
Position a rack in the lowest position in an oven and place a pizza stone, if using, in the top third of the oven. Preheat the oven to 450°F (230°C).
Combine remaining 1 Tbs. olive oil with the 3 Tbs. canola oil and use it to coat 18" x 13" (45-by-33-cm) rimmed baking sheet. Transfer dough to baking sheet and press evenly into the bottom and up the sides. Let stand, uncovered, in a warm location for 15 minutes.
Press the dough up the sides of the pan again and, using your fingertips, make several deep indentations with the dough, spaced evenly across the bottom of the crust. Spread the sauce evenly on top of the dough, then top with cheese and other toppings as desired. Sprinkle with the seasoning packet. Let stand, uncovered, in a warm location for 15 minutes more.
Bake pizza on baking sheet until cheese is bubbling and edges of dough are golden brown, about 15 minutes. Carefully transfer pizza to pizza stone and continue baking until the crust is deep golden and crisp, 2 to 3 minutes more. If not using a pizza stone, continue to bake pizza on baking sheet 3 to 5 minutes more. Cut into squares and serve.
Makes one 18" x 13" pizza.
