  • A woman-owned company, Messermeister has handcrafted hot-drop, hammer-forged knives in the historic cutlery center of Solingen, Germany, for 40 years. The blades are made of a high-carbon alloy that resists stains and corrosion, and ground to an exceedingly sharp edge. Handles carved from olivewood feature distinctive grain patterns that make each one unique. This hollow-edge santoku has shallow oval-shaped depressions along the cutting edge that prevent food from sticking.

    • One-piece, hot-drop, hammer-forged technique produces super-strong blade from heel to tip.
    • German high-carbon alloy blade resists stains and corrosion.
    • Blade is hand stropped on cloth wheel, creating sharpest possible cutting surface.
    • Edge is sharpened to 15-degree angle in three-step process.
    • Blade is heat treated and cooled to achieve Rockwell hardness of 57–58.
    • Bolsterless heel allows entire length of cutting edge to be honed and sharpened.
