Paula Lambert fell in love with fresh mozzarella while attending college in Italy, and brought her passion for cheesemaking home to Dallas. Four decades later, her award-winning Mozzarella Company still makes some of America's finest artisanal cheese. Each variety is handcrafted using local milk and methods passed down through generations of European cheesemakers. Great for impromptu meals, cooking and entertaining, this collection features five of Lambert's most popular creations.

• Because the items in this collection are crafted in limited quantities, we may occasionally need to make substitutions with similar items of equal quality.

• Traditional Caciotta: A Texas twist on Monterey jack, this flavorful cheese becomes even smoother and creamier as it ages. (8 oz.)
• Queso Blanco with Chile and Epazote: Zesty chiles and aromatic epazote leaves give this fresh, crumbly cow's milk cheese layers of flavor. (12 oz.)
• Goat Round: This classic goat cheese has a mild flavor accented by herbs de Provence. (5 oz.)
• Mozzarella Ball: This soft, creamy and flavorful fresh mozzarella is made with cow's milk. (8 oz.)
• Smoked Scamorza: This subtle, buttery cheese is made with cow's milk curds and smoked over pecan shells to create savory flavor and golden color. (5 oz.)

Receiving Instructions

• Cheese ships chilled with gel packs. Upon receipt, store cheese in refrigerator. It is best stored in crisper bin or container away from fan. For best results, enjoy within 5 days of receipt.

Serving Instructions

• To experience full flavor of cheese, serve at room temperature.
• For optimal flavor and texture, remove cheese from refrigerator approx. 1 hour prior to serving. Leave cheese in packaging as it comes to room temperature to prevent oxidation, which may affect flavor.
• Cut and set out only as much cheese as you plan to serve, returning the rest to the refrigerator.
• Wrap any leftover cheese in parchment or waxed paper (not plastic wrap) and store in refrigerator.

• Traditional Caciotta: Pasteurized cow's milk, cultures, calf rennet powder (sodium chloride, rennet extract [chymosin, pepsin]), salt.
• Queso Blanco with Chile and Epazote: Pasteurized cow's milk, cultures, acetic acid, lipase powder (salt, nonfat dry milk, kid lipase), fresh jalapeño chiles, fresh epazote, salt.
• Goat Round: Pasteurized goat's milk, cultures, vegetable rennet (rhizomucor miehei), herbs de Provence (tarragon, chevril, savory, minced garlic, rosemary, rubbed sage, marjoram, thyme, parsley, basil, lavender), salt.
• Mozzarella Ball: Pasteurized cow's milk, cultures, vegetable rennet (rhizomucor miehei), salt.
• Smoked Scamorza: Pasteurized cow's milk, cultures, vegetable rennet (rhizomucor miehei), salt.
• Smoked over pecan shells.
