Williams Sonoma Spatchcock Turkey Dinner, Serves 4-6

Get a delicious Thanksgiving meal on the table quickly and easily. Our time-saving collection includes a premium free-range Willie Bird turkey, which is spatchcocked (split down the back and flattened) to cook faster than a regular bird. We paired it with our crowd-pleasing mashed potatoes and classic green bean almondine, both prepared by hand from the finest ingredients. The feast is finished with a Sweet Jane's Bakeshop pumpkin pie, featuring a creamy, generously spiced custard inside a perfectly flaky crust.

• Spatchcock Turkey: This premium free-range Willie Bird is spatchcocked for quick cooking. Just brine or season the turkey as usual, then roast or grill to moist, savory, golden perfection. (16–18 lb.; 4–6 servings)
• Mashed Potatoes: Our savory potatoes are whipped with butter and cream, and accented with garlic, herbs, onion and chives. (2 lb.; 5 servings)
• Green Bean Almondine: This classic side dish features fresh green beans and crunchy toasted almonds, tossed in butter and seasoned with garlic, black pepper and salt. (1 lb. 14 oz.; 5 servings)
• Sweet Jane's Bakeshop Pumpkin Pie: Spiced with fragrant cinnamon, ginger and cloves, this creamy pumpkin pie is baked in a flaky crust and topped with a pastry maple leaf. (9" diam.; 8–10 servings)

Receiving Instructions

• Turkey ships fresh to arrive chilled. Sides and pie ship frozen with dry ice, which may have evaporated during shipment. This is normal. Please take care not to touch any remaining dry ice with bare hands.
• Upon receipt, remove turkey from shipping container and store unopened in refrigerator for up to 5 days or in freezer for up to 1 year (see below for thawing instructions).
• Store unopened potatoes and green beans in freezer for up to 12 months.
• Remove pie from bakery box and store unopened in freezer for up to 1 month. Alternatively, thaw in refrigerator overnight and enjoy within 7 days.

Turkey Thawing Instructions

Refrigerator Thawing

• For best results, thaw frozen turkey slowly in refrigerator. Allow 3–4 days to fully thaw.

Cold-Water Thawing

• To cook frozen turkey within 1 day, use cold-water bath for fast thawing. Allow approx. 30 minutes per pound or approx. 8–10 hours to fully thaw.
• Leave turkey in original bag and submerge in cold tap water.
• Change water every 30 minutes until thawed.
• Cook immediately after thawing.

Preparation Instructions

Turkey

• Remove turkey from refrigerator and let it come to room temperature for 1 hour before cooking.
• Preheat oven to 350°F.
• Remove turkey from bag, taking care to retain any juices and spices in bag. Leave nylon truss on legs (truss is oven safe to 450°F).
• Place turkey on rack in roasting pan, splayed out so it is flat. Pour any remaining juices and spices in bag over and around breast and legs. Cover breast and wings with foil.
• Roast for 1 hour, then remove foil and reduce heat to 325°F. Roast for additional 2 1/2 hours, or until instant-read thermometer inserted into thickest part of thigh reaches 165°F.
• Total cooking time should be approx. 3 1/2 hours (approx. 12–14 minutes per pound). We recommend checking internal temperature throughout roasting time to prevent overcooking.
• Let rest for 15 minutes before carving.

Mashed Potatoes

• Keep frozen until ready to cook.
• Preheat oven to 350°F. Remove plastic wrap, cover tray with foil and place on sheet pan.
• Cook for 60–65 minutes or until internal temperature reaches a minimum of 145°F as measured by instant-read thermometer.
• Let rest for 10 minutes before serving.

Green Bean Almondine

• Keep frozen until ready to cook.
• Preheat oven to 375°F. Cover tray with foil and cook on center rack for 60–70 minutes or until internal temperature reaches a minimum of 145°F as measured by instant-read thermometer.
• Remove foil from tray and serve.

Pumpkin Pie

• Remove from freezer and unwrap. Place pie back in box, then store in refrigerator overnight. Remove from refrigerator approx. 1 hour before serving.
• Store leftovers in airtight container in refrigerator.
• Do not microwave.

• Spatchcock Turkey: Turkey.
• Mashed Potatoes: Potatoes, 2% milk (Grade-A reduced-fat milk, vitamin A palmitate, vitamin D3), unsalted butter, heavy whipping cream, contains 2% or less of: granulated garlic, salt.
• Green Bean Almondine: Green beans, almonds, unsalted butter, contains 2% or less of: black pepper, granulated garlic, salt.
• Sweet Jane's Bakeshop Pumpkin Pie: Pumpkin, evaporated milk (milk, sodium phosphate, carrageenan, vitamin D3), granulated sugar, unbleached flour (wheat flour, niacin, iron, thiamine mononitrate, riboflavin, folic acid), baking shortening (sustainably produced palm oil, canola oil), eggs, water, vinegar, salt, cinnamon, ground ginger, ground cloves.
