From hearty gumbo and jambalaya filled with chicken and andouille pork sausage to classic crawfish étouffée, these made-from-scratch favorites arrive fully cooked. • Chicken & Andouille Sausage Gumbo: Loaded with chicken and andouille pork sausage, this gumbo gets its rich flavor from the iconic Cajun trinity of onions, bell peppers and celery, enhanced with garlic, chiles and a touch of smoke. (2 lb.; 8 servings)
• Chicken & Andouille Sausage Jambalaya: Billy's famous jambalaya combines smoky grilled chicken and andouille pork sausage with long-grain rice, bell peppers and tomatoes – plus a special blend of spices for a lively kick. (2 lb.; 8 servings)
• Crawfish Étouffée: Taste the vibrant flavors of the bayou in a rich étouffée that combines a buttery sauce, vegetables, herbs and spices with freshly caught crawfish from Breaux Bridge, Louisiana – the crawfish capital of the world. (2 lb.; 8 servings)

Receiving Instructions

• Entrées ship frozen with dry ice, which may have evaporated during shipment. This is normal. Please take care not to touch any remaining dry ice with bare hands. Upon receipt, remove entrées from shipping container and store in refrigerator for up to 1 week or in freezer for up to 1 year.

Thawing Instructions

• If frozen, thaw in refrigerator overnight.

Preparation Instructions

• On stovetop, bring pot of water to a boil. Reduce heat, place sealed bag in water and simmer for 8–10 minutes or until hot.
• Use caution when cutting bag open – contents will be very hot.
• Serve gumbo and étouffée over freshly cooked rice.
