Air-Fried Sweet Potatoes with Candied Walnuts

Think outside the oven on Thanksgiving Day! Turn to your Instant Pot when you’ve maxed out on oven space while the turkey is roasting or the pies are baking. Using the air fryer attachment, the appliance yields a tender, fluffy sweet potato with a lightly crisp exterior. If you like, garnish with a sprinkling of fresh thyme leaves, which adds a fresh counterpoint to the sweetness of the candied walnuts.

Ingredients:

  • 1 medium sweet potato
  • 3/4 tsp. avocado or vegetable oil
  • Kosher salt and freshly ground pepper
  • 1 cup (4 oz./125 g) walnuts
  • 1/4 cup (2 oz./60 g) sugar
  • 1 Tbs. plus 1 1/2 tsp. unsalted butter
  • Pinch of freshly grated nutmeg
  • Flaky sea salt for sprinkling

Directions:

If necessary, trim off the ends of the sweet potato so it will fit in the Instant Pot air fryer basket. Using a fork, poke holes all over the sweet potato, then coat with the oil. Season generously with kosher salt and pepper.

Place the sweet potato in the Instant Pot air fryer basket. Insert the basket into the pot and attach the air fryer lid. Press the Air Fry button and set the cook time for 50 minutes at 400°F (200°C), then press Start.

Meanwhile, in a sauté pan over medium heat, combine the walnuts, sugar and 1 Tbs. of the butter. Cook, stirring occasionally, until the walnuts smell toasty and are coated with the sugar and butter, about 5 minutes. Transfer to a plate and let cool.

When the cooking time is up, transfer the sweet potato to a plate. Using a knife, slice open the top of the skin and open the potato. If desired, return the potato to the air fryer and cook at 400°F (200°C) for 10 minutes to crisp the top and edges.

To serve, cut the sweet potato in half lengthwise and slightly mash the potato flesh with a fork. Sprinkle with the nutmeg and flaky sea salt and top with the remaining 1 1/2 tsp. butter. Garnish with the candied walnuts and serve immediately. Serves 2.
