
Berry and Coconut Smoothie
Coconut milk adds a slight creaminess to this smoothie, which can be made with frozen berries when fresh ones aren’t in season.
Ingredients:
- 1/2 cup (4 fl. oz./125 ml) coconut milk
- Juice of 2 tangerines
- 1 cup (4 oz./125 g) fresh or frozen raspberries
- 1 cup (4 oz./125 g) fresh or frozen blackberries
- 1 cup (4 oz./125 g) strawberries, stemmed and halved
- 2 cups (250 g) ice cubes
Directions:
In a Vitamix blender, combine the coconut milk, tangerine juice, raspberries, blackberries, strawberries and ice cubes. Puree, slowly increasing the blender speed to high, until smooth, 1 to 2 minutes. Divide between 2 glasses and serve immediately. Serves 2.
