
Blueberry-Lemon Honey Fizz
This fruity spring sparkler is spirit-free, making it perfect for a spring brunch or a refreshing treat any time of day. Adjust the amount of honey depending on how sweet your blueberries are and according to your personal preference. For a slushy treat on a warm day, pour the assembled drink ingredients and ice into a blender and blend on high speed until the ice is finely crushed.
Ingredients:
- 1/2 cup (2 oz./60 g) fresh blueberries, plus more for garnish
- 2 Tbs. fresh lemon juice
- 1 to 1 1/2 Tbs. honey
- 1 1/2 tsp. balsamic vinegar
- Pinch of kosher salt
- 2 oz. (60 ml) ginger beer or soda water
Directions:
Chill a double old-fashioned glass or tumbler in the freezer for at least 20 minutes.
In a mixing glass, combine the blueberries, lemon juice, honey, balsamic vinegar and salt. Using a muddler, muddle the ingredients together until the blueberries are smashed and the ingredients are combined. Using a fine-mesh strainer, strain the mixture into the prepared glass, pressing on the solids with a silicone spatula.
Add the ginger beer to the glass and fill with crushed ice. Stir gently to combine, garnish with blueberries speared on a cocktail pick, and serve immediately. Makes 1 drink.
