
Cucumber Cooler
Made with refreshing cucumber and lime, this non-alcoholic drink will cool you down on a hot summer day. We love using Persian limes as they add more acidity and tart flavor; this variety is the one most commonly found in supermarkets. If you prefer a slightly sweeter drink or if your lime is particularly acidic, just add a bit more maple syrup.
Ingredients:
- Cucumber ribbon for garnish
- 1/2 cucumber (about 5 oz./155 g), peeled and halved crosswise
- Juice of 1 Persian lime
- 1 Tbs. plus 1 tsp. maple syrup, plus more if desired
- Small pinch of Himalayan pink salt or kosher salt
- Ice cubes as needed
- Sparkling water
- Mustard flower for garnish (optional)
Directions:
Line a rocks glass with a cucumber ribbon; set aside.
In a food processor or a blender, add the peeled cucumber and puree until blended and smooth. Strain the puree into a mixing glass or a cocktail shaker, then press the remaining juice out of the cucumber pulp; discard the pulp. Add the lime juice, maple syrup and salt to the mixing glass and stir to combine.
Strain the mixture into the rocks glass and add a handful of ice. Top with sparkling water and stir gently. Garnish with a mustard flower and serve immediately. Serves 1.
