Frozen Passion Fruit Margarita
Passion fruit is very acidic, so it’s not necessary to use as much lime juice in this recipe as in a traditional margarita. If you prefer a margarita on the rocks, blend the drink for a shorter period of time and then strain it into a glass filled with ice.
To make simple syrup, in a measuring cup, stir together 1/4 cup superfine sugar in 1/4 cup hot water until dissolved. Let cool. This recipe makes 3 fl. oz. syrup and can be doubled or tripled as needed.
Ingredients:
- 8 fl. oz. passion fruit nectar
- 6 fl. oz. silver tequila
- 3 fl. oz. fresh lime juice
- 2 fl. oz. simple syrup (see note above)
- Ice, as needed
- 4 lime wedges
Directions:
Chill 4 glasses in the freezer until frosted.
In a blender, combine the passion fruit nectar, tequila, lime juice, simple syrup and ice. Process on high speed until smooth and slushy. Pour into the chilled glasses, garnish each drink with a lime wedge and serve. Makes 4 drinks.
