Gaby's Garlic Pasta

Gaby Dalkin, cookbook author and founder of the popular site What’s Gaby Cooking, shares the story behind her garlic pasta. One late night when she was starving, she recalls, “I reverted back to my 7-year-old self and made the pasta I would order on Tuesday nights at Italian Night at our country club, an olive sauce with tons of garlic and lemon and cheese.” Now she’s amped up the flavor of that childhood favorite by adding her Go To Seasoning. The recipe makes more garlic sauce than you will need. The leftover sauce is great as a dip for bread or drizzled over roasted vegetables, fish, chicken or meats. It will keep in an airtight container in the fridge for a few weeks.

Ingredients:

For the garlic sauce:

  • 1 cup (8 fl. oz./250 ml) olive oil
  • 10 garlic cloves, finely minced
  • 1 tsp. red pepper flakes
  • 1 to 2 tsp. Gaby’s Go To Seasoning
  • Zest of 1 lemon

  • Kosher salt and freshly ground pepper
  • 8 oz. (250 g) linguine
  • 3/4 cup (3 oz./90 g) shredded mozzarella cheese

Directions:

To make the garlic sauce, in a fry pan over medium heat, warm the olive oil. Add the garlic and sauté until fragrant, about 30 seconds, then remove from the heat. Add the red pepper flakes, Gaby’s Go To Seasoning and lemon zest and stir to combine. Let cool.

Meanwhile, bring a pot of salted water to a boil over high heat. Add the pasta and cook according to the package directions. Drain the pasta and return it to the pot. Add 1/2 cup (4 oz./125 g) of the garlic sauce and the mozzarella and toss to combine and melt the cheese. Taste and adjust the seasoning with salt and pepper. Serve immediately. Serves 2.
