
Kiwi and Kale Smoothie
Get your morning off to a great start with this smoothie that combines the sweet-tart zing of kiwi with refreshing fennel and pear. The kale adds extra color and a healthy dose of fiber and vitamins.
Ingredients:
- 1/2 cup (4 oz./125 g) plain Greek yogurt
- 1 kiwifruit, peeled and halved
- 1/2 cup (1 oz./30 g) chopped Tuscan kale
- 1/2 cup (1 1/2 oz./45 g) chopped fennel
- 1/2 cup (2 oz./60 g) chopped pear
- 2 Tbs. honey
- 1 cup (4 oz./125 g) ice
Directions:
In a blender, combine the yogurt, kiwifruit, kale, fennel, pear, honey and ice in the order listed. Blend on high until smooth, about 1 minute, adding 1 to 2 Tbs. water if desired for a looser consistency. Pour into glasses and serve. Serves 2.
