Mango-Habanero Salsa

Whether you’re serving tacos, grilled fish or meat, or just plain scrambled eggs, a good freshly made salsa adds bright flavor to the finished dish.

Ingredients:

  • 2 ripe mangoes, peeled and diced
  • 1/4 cup (1 1/2 oz./45 g) finely chopped red onion
  • 2 green onions, white and light green portions, thinly sliced
  • 1/2 habanero chile, finely chopped
  • 1 Tbs. fresh orange juice
  • 1 Tbs. fresh lime juice
  • 1 tsp. grated orange zest
  • Kosher salt and freshly ground pepper

Directions:

In a bowl, combine the mangoes, red and green onions, habanero, orange and lime juices and orange zest and stir well, mashing some of the fruit on the side of the bowl with the spoon. Season with salt and pepper, then let stand at room temperature for 30 minutes before serving to allow the flavors to blend.
