Celebrate the Festival of Lights with a party pairing several different latkes with bottles of bubbly. Traditional latkes made with potato and onion are here topped with colorful ingredients with roasted beets or smoked trout and trout roe. But you can also mix things up by making latkes with sweet potatoes, pairing this seasonal vegetable with a smear of fig jam and a sliver of blue cheese. Or try latkes made with zucchini for even greater variety.
