Mint-Cacao Chip Smoothie

This smoothie, which contains plenty of phytonutrients and protein, is a delicious way to add veggies to your smoothie routine. Use the recipe as inspiration for your own creations based on what you have in the fridge. If you don’t have a banana, for example, you can substitute half an avocado, or use your favorite nut butter or plain yogurt in place of the protein powder. We also like to throw in a handful of greens, like baby spinach, or sprinkle in some spirulina, maca powder or matcha powder for an extra boost.

Ingredients:

  • 1/2 ripe fresh or frozen banana
  • 1/2 cup (2 oz./60 g) frozen cauliflower rice or frozen diced zucchini
  • 1/2 bunch fresh mint leaves, including any tender stems
  • 1 cup (8 fl. oz./250 ml) almond milk
  • 1 generous pinch ground Ceylon cinnamon
  • 1 scoop vanilla or plain protein powder
  • 1 Tbs. cacao nibs, plus more for garnish

Directions:

In a blender, combine the banana, cauliflower, mint, almond milk, cinnamon and protein powder. Blend on high speed until smooth. Add the cacao nibs and blend until the nibs are broken up but still have some texture (like the chocolate flecks in mint chocolate chip ice cream).  Pour into a glass and garnish with more cacao nibs. Serve immediately. Serves 1.
