
Pomegranate-Ginger Tequila Mule
A splash of pomegranate juice turns this refreshing cocktail a pretty pale pink. Make one just for yourself, or mix the ingredients in a pitcher to serve a crowd at the holiday table.
Ingredients:
For one drink:
- 1 1/2 oz. (45 ml) pomegranate juice
- 1 oz. (30 ml) tequila blanco
- 1/2 oz. (15 g) fresh lime juice
- 2 to 4 oz. (60 to 120 ml) ginger beer, chilled
- Pomegranate seeds for garnish
- Candied ginger for garnish
For ten drinks:
- 2 cups (16 fl. oz./500 ml) pomegranate juice
- 1 1/4 cups (10 fl. oz./310 ml) tequila blanco
- 2/3 cup (5 fl. oz./160 ml) fresh lime juice
- 2 1/2 cups to 5 cups (20 to 40 fl. oz./625 ml to 1.2 l) ginger beer, chilled
- Pomegranate seeds for garnish
- Candied ginger for garnish
Directions:
To make one drink, in a cocktail shaker filled with ice, combine the pomegranate juice, tequila and lime juice. Shake vigorously until very cold, about 30 seconds, then pour into an ice-filled double old-fashioned glass. Top with the ginger beer as desired, garnish with pomegranate seeds and candied ginger, and serve. Makes 1 drink.
To make a pitcher, in a large pitcher, stir together the pomegranate juice, tequila and lime juice. Stir to combine. To serve, pour about 6 Tbs. (3 fl. oz./90 ml) of the mixture into a cocktail shaker filled with ice. Shake vigorously until very cold, about 30 seconds, then pour into an ice-filled double old-fashioned glass. Top with 1/4 to 1/2 cup (2 to 4 fl. oz./60 to 120 ml) ginger beer, as desired, and serve. Repeat to make the remaining drinks. Makes 10 drinks.
