Soy-Ginger Glazed Salmon with Broccolini

Not all nonstick fry pans can take the intense high heat of a broiler, so be sure yours can before you decide to make this no-fuss one-pan skillet dinner. Alternatively, you could use a cast-iron pan, but if you do, brush the fish fillets with oil to keep them from sticking. When selecting the salmon, look for bright-colored, moist fillets from wild-caught or responsibly farmed fish.

Ingredients:

For the glaze:

  • 1/2 cup (4 fl. oz./125 ml) soy sauce
  • 1/3 cup (2 1/2 oz./75 g) firmly packed light brown sugar
  • 2 Tbs. hoisin sauce
  • 1 1/2 Tbs. peeled and grated fresh ginger
  • Juice of 1 lime

  • 4 salmon fillets, each about 6 oz. (180 g)
  • 1 bunch broccolini (about 3/4 lb./375 g), trimmed and cut into 2-inch (5-cm) pieces
  • 1/4 tsp. sesame seeds
  • 1 to 2 green onions, white and pale green portions, thinly sliced on the diagonal
  • Steamed rice for serving

Directions:

Preheat a broiler.

To make the glaze, in a large broilerproof nonstick fry pan over medium heat, combine the soy sauce, brown sugar, hoisin sauce, ginger and lime juice and cook, stirring to dissolve the sugar, until the mixture is reduced by half, 1 to 2 minutes. Transfer the glaze to a small bowl. Wipe out the pan with a paper towel.

Place the salmon, skin side down, in the pan and brush with the glaze. Arrange the broccolini around the salmon. Transfer to the broiler and cook until the salmon is flaky and the broccolini is tender, 6 to 8 minutes. Garnish with the sesame seeds and green onions. Serve immediately over steamed rice. Serves 4.
