Using a cookie press allows bakers to produce a big batch of pretty cookies in a flash. Just fill the barrel with dough and pull the lever or push the plunger, depending on the type of press you own. The dough is easily pressed through a decorative disc onto a baking sheet, ready to pop in the oven.

Ingredients:

  • 2 egg yolks, at room temperature
  • 2 tsp. heavy cream
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract
  • 16 Tbs. (2 sticks) (8 oz./250 g) unsalted butter, at room temperature
  • 2/3 cup (5 oz./155 g) sugar
  • 1/2 tsp. salt
  • 2 cups (10 oz./315 g) all-purpose flour, sifted
Spritz Cookies

Directions:

Preheat an oven to 375°F (190°C).

In a small bowl, whisk together the egg yolks, cream and vanilla and almond extracts. In the bowl of an electric mixer, beat the butter, sugar and salt on medium speed until fluffy, about 3 minutes. Reduce the speed to low and slowly add the egg yolk mixture, beating until well combined, about 1 minute. With the mixer still running, gradually add the flour and beat until combined, scraping down the sides of the bowl as needed. Turn the dough out and knead once or twice.

Following the manufacturer’s instructions, fill the barrel of a cookie press and form cookies onto an ungreased baking sheet, spacing them about 1 inch (2.5 cm) apart. Refrigerate for 10 minutes, then transfer to the oven and bake until edges of cookies are light golden-brown, 8 to 10 minutes. Transfer the cookies to a wire rack and let cool. Repeat with remaining dough. Makes about 6 dozen cookies.

Rated 5 out of 5 by from Perfect Spritz Cookies Just made some cookies this afternoon for Santa… fun to add colors to the dough and even without refrigeration, it all still came out great. I should have looked up alternatives to almond extract but without it, the cookies were still divine. The press is fun for the kids as well! One downside, my dough made maybe 3 dozen cookies. Maybe bc I have the large cookie press?

Rated 4 out of 5 by from I'm a bit confused I have made and very much enjoyed these cookies. I am a bit confused by the recipe as written, though, as 1/2 pound of butter weighs 227 grams, not 250. Two-thirds cup is 5.333 ounces, not 5. Two-thirds cup of sugar weighs ~ 133 grams, not 155. Five ounces of sugar weighs 125 grams, not 155. Time for an edit?

Rated 5 out of 5 by from Melt in your mouth Made this recipe as written. These cookies are my husband's childhood favorite that his mom always baked. He loves this recipe. This is the 3rd time if have made these. They are flavorful, buttery and come out perfect with our cookie press from Williams Sonoma. I chilled the cookie sheet in the freezer instead of chilling the dough in the fridge and it worked just as well. I have done both ways.
