
Summer Simmer Pot

Ingredients:
- 5 sprigs fresh mint
- 3-inch knob fresh ginger, sliced
- 1 lime, sliced
- 1 tsp. black peppercorns
- 8 cups (64 fl oz./1.9 l) water
Directions:
In a Dutch oven, combine the mint, ginger, lime and black peppercorns. Cover with water and bring to a simmer over low heat. Continue to simmer, uncovered, for up to 2 hours.
