Celebrated on May 5, Cinco de Mayo is a time to gather with friends and family and savor a meal of Mexican fare. Our south-of-the-border menu begins with icy cold margaritas and queso fundido, a dish of warm melted cheese served with tortilla chips for dipping. The main course features salpicón of beef; this flavorful mixture of shredded beef is enlivened with chilies and garnished with sliced avocados and chopped onions. For dessert, serve scoops of ice cream embellished with shards of bittersweet chocolate and dulce de leche, a luscious caramel that is a favorite in Latin American countries. All you need to complete the festivities is a mariachi band!
