
1. Gather the chives into a bundle
Discard any wilted or yellowed chives. Rinse the chives and pat dry. Gather a small amount of the blades into a little bundle that fits comfortably in your hand.

2. Snip the chives
Using kitchen scissors, finely snip the chives into small pieces or snip them into slightly longer lengths as directed in your recipe. (Alternatively, use a very sharp chef’s knife to cut the chives into slices.)
